Quesadillas two Ways
I’m back with another easy to make recipe because who really has time to prepare a Sunday style dinner during the week. This week we’re preparing two kinds of quesadillas, steak and chicken. You’re probably wondering why steak and chicken? Well if your kids are anything like mine, they’re picky.
Im sure you’re thinking, a recipe with another store bought rotisserie chicken. Short answer, yep. Is there another meat as versatile as chicken? Let me just say, as a black person, I was given the gift of creating at minimum, 20 different dishes with one chicken. I’m basically magic!
In the city where I live, we have several Hispanic markets with amazing ingredients, including preseasoned carne asada which they’ll dice for free because saving time is important!
Here’s what you’ll need:
⁃ 1 store bought precooked rotisserie chicken
⁃ 1 1/2 lbs of carne asada
⁃ 1 pack of large burrito sized tortillas
⁃ 1 bell pepper (any color)
⁃ 1 yellow onion
⁃ 1 tsp cumin
⁃ 1 tsp chili powder
⁃ 1 tsp oregano
⁃ 1/2 tsp white pepper
⁃ Fiesta blend shredded cheese
⁃ Sour cream
⁃ Salsa (Your favorite brand)
⁃ 1 tsp vegetable oil
⁃ 2 nonstick skillets
Jaz’s Simple 5 ingredient guacamole
⁃ 2 large ripe avocados 🥑
⁃ 1 jalapeño
⁃ 1 lime
⁃ 1 red onion
⁃ Cilantro
⁃ 2 cloves of garlic
Prep Work & Making Jaz’s Simple 5 ingredient Guac:
• shred chicken
• Dice half yellow onion
• Dice 1 bell pepper
• Dice half a jalapeño
• Mince 2 garlic cloves (1 for Guac & 1 for chicken)
• Chop a handful of cilantro
• Cut up avocado https://youtu.be/h0fUd-B5-m0 . Link to a video on how to properly cut an avocado. I don’t need anyone blaming me for a trip to the ER because they cut their hand instead of the avocado.
Time to assemble and cook!
Guac Directions:
Step 1: dice up avocado, add to a bowl and mash with a fork (I mash pretty fine because I don’t like it chunky)
Step 2: add the juice of the lime. This will add a great zing and prevent your avocados from turning brown
Step 3: add 1/4 diced red onion
Step 4: add 1 minced garlic clove
Step 5: add diced jalapeño
Step 6: add chopped cilantro
Step 7: add 1/4 tsp chili powder, 1/4 tsp cumin seal salt and white pepper to taste
*I know I said 5 ingredients, seasonings don’t count*
Place in the fridge to chill while you prepare everything else.
Directions on steak & chicken:
Step 1: allow skillet one to heat and get pretty hot (medium high heat) add steak and cook. No oil needed if it’s nonstick. Cook until done. Simple!
Step 2: add the 1 tsp of vegetable oil to second skillet on medium heat. Allow skillet to warm up but not get too hot. Add diced yellow onion, diced bell pepper, and second cloves of minced garlic. Sauté until translucent. Once translucent, add shredded chicken, add chili powder, cumin, and white pepper. No need to add any salt, the chicken is seasoned. Add 1/4 cup water. Cook until chicken is warmed through and most of the water is cooked out.
You’re done! Time to assemble your quesadillas! I use a George Forman grill but a skillet will do. Take 1 tortilla cover half with cheese and meat of your choice, more cheese, then crisp in skillet on medium low heat sprayed with a small amount of Pam or nonstick spray. Flip and do the other side. Make as crispy as you like. Serve with sour cream, salsa, and guacamole. This fed my family of 6. Try the recipe and let me know how it comes out!
