Everyone needs a quick and nutritious breakfast and this is mine! A filling smoothie bowl and avocado toast with egg whites! This would also make a pretty good lunch as well with a few tweaks.
This has been my go-to breakfast. I could eat this everyday so I’m sharing because, sharing is caring.
Here’s what you’ll need:
• 1 avocado
• 6 strawberries
• 1 banana
• 1 egg white
• 1 clove of garlic
• 1 slice of bread (I used sourdough)
• 1/2 cup of unsweetened almond milk
Directions
⁃ Cut up the strawberries and the banana and place them in a freezer bag. I placed mine in the freezer the night before.
*Tip: you can prepare individual bags for the week for meal prepping*
⁃ Get your blender or bullet and put in the frozen fruit, 1/4 of the avocado and almond milk. I let it sit while I prepared the egg whites and bread.
⁃ Take a skillet, spray a little coconut oil spray and cooked the eggs whites on med heat until done.
⁃ Wipe out your skillet and sit aside. Brush both sides of the bread with olive oil. (Start your blender here) Place your bread into the skillet and toast until desired doneness. I love a crispy crusty piece of bread!
⁃ After the toast is done, take a garlic clove broken in half and rub on one side of the warm bread. The smell is intoxicating!
By this time your smoothie bowl should be done. You can adjust the amount of liquid used. Less liquid for thicker consistency and more liquid for thinner.
Now it’s time to assemble. Mash up the rest of the avocado and spread it on top of the toast. I sprinkled mine with Slap Ya Mama Cajun Seasoning. Top with egg white.
I absolutely loveeeeeee the endless possibilities of avo toast! You can do avocado and feta. Avocado and bacon. Whatever suits your tastebuds!
Now, pour your smoothie into a bowl and top with your favorite toppings. I used unsweetened coconut, chia seeds, vanilla almond granola and sliced strawberries and banana. You can top with whatever you like.
Now it’s time to eat! This literally took me about 10 minutes! I will say, if you’re looking for a “sweeter” bowl, you can use a flavored yogurt in lieu of the avocado in the smoothie, and top the finished bowl with honey. I opted for no added sweeteners and it was perfect! Let me know if you make this. I’d love to see pictures!
